At the time of the 1910 census, Gilbert and Minnie were living with his parents, Louis and Mary Ellen Craft, in Mobile Alabama. Louis was born in New York, with both of his parents born in Germany. Mary Ellen was born in New York, to a Irish mother. Gilbert and his new bride Minnie were both born in Alabama. Gilbert was listed as age 22, and Minnie as age 20. Also living in the home were Gilbert's sister, Antonette, and her husband George Swann, along with their two young children.

The 1920 and 1930 census show that Gilbert and Minnie had only one son, Gilbert J. Craft Jr, born ca 1923.

When he registered for the draft during the First World War, he was a resident of Mobile, Ala, and worked as the Chief Engineer at Citronelle Public Service Corporation. He was described as tall and slender, with grey eyes and dark brown hair.
